The Hormone Secret

This week on the blog we’ve been looking at vitamin D, the all-important ‘sunshine vitamin’.

Our bodies store vitamin D in our fat cells and we depend on adequate dietary intake to keep these levels optimum. Vitamin D can be naturally sourced from sunshine however, due to the modern day environment where we are dominantly indoors and harsh UV rays that require sun sunscreen to protect our skin from burning, we are not getting enough exposure to vitamin D from sunshine.

Vitamin D can also be sourced in some foods. It is a fat-soluble vitamin so increasing your intake of oily fish like salmon and activated almonds will help increase your vitamin D levels. For more good sources of vitamin D have a look at our blog post about the importance of vitamin D.

Vitamin D deficiency is significant in New Zealand, with 84% of New Zealanders are deficient in vitamin D*, which is why I also recommend a good quality vitamin D supplement alongside eating foods rich in vitamin D. BePure Vit D Restore is high strength, 100% natural vitamin D nutritional support, to boost vitamin D levels for optimal health and energy status.

This salmon dish a beautiful and simple way to get the nutrients you need to boost your vitamin D levels, plus it is a great recipe to feed the whole family. Simply double or triple the recipe to feed a crowd. This salmon dish is best served with fresh salad greens.

BePure Almond, Lemon, Parsley-crusted Salmon Recipe

Serves: 2

Ingredients

  • 1/4 Cup Almonds
  • Zest of 1/2 lemon
  • 10g fresh parsley
  • Pinch of sea salt
  • 1/2 free range egg white
  • 2 x 150 grams salmon fillets - deboned
  • Juice of half an orange

Instructions

  1. Preheat oven to 200*C
  2. Place the almonds, lemon zest, parsley and salt in a food processor or blender and blitz until the texture resembles breadcrumbs.
  3. Brush each piece of salmon with egg white. Spoon almond crumb over each piece and lightly press with your hand. Drizzle orange juice over for extra flavour.
  4. Roast for 12 minutes. The salmon should be only just done, as it will continue to cook with the residual heat and flake easily.
  5. Serve immediately.
