Winter is that great time of year to rug up and enjoy all your favourite warm comfort foods – like this Winter Roast Beef recipe.
It's also the time of year when root vegetables are in season giving us the perfect opportunity to give our digestive systems a bit of a break from raw foods abundant in summer. Roasts are a great way to enjoy seasonal winter veggies and will not only will they keep you warm this winter, but they will also help to boost your mood.

Serves 4-6 | GF, DF, RSF, EF
Ingredients:
- Coconut oil
- 1.5kg bolar beef
- 2 onions
- Garlic
- Salt and pepper
- Beetroot
- Pumpkin
- Parsnips
- Bunch of fresh herbs – thyme, rosemary, sage
- Cabbage
- Lemon
- 2 tbsp Cornflour
- 1 cup of water
Instructions:
- Leave the beef at room temperature for 20 minutes before preparing
- Heat the oven to 160 degrees while you prepare the beef
- Grease an oven dish with coconut oil, place the beef in the dish, rub with coconut oil, season with salt and pepper and place in the oven for 90 minutes
- Cut onions into quarters and peel garlic cloves - leaving them whole
- Cut pumpkin, parsnips and beetroot into chunks - leaving the skins on
- Place all the vegetables and herbs in the roasting dish with the beef for the last 60 minutes
- When the beef is 15 minutes until done, chop cabbage and place in a pan with coconut oil and lemon juice then cover with a lid
- Stem cabbage until it becomes soft and season with salt and pepper
- When beef is done to your liking, transfer to a board and let it rest for 15 minutes before serving
- While the beef is resting, make a gravy with the leftover juice in the roasting dish
- In a jar, place cornflour and water and shake until there are no clumps
- Place the roasting dish on a low-medium heat element and add the cornflour water
- Whisk gravy until it becomes thick and creamy. Add more water and cornflour if needed
- Plate up your roast beef with veggies and gravy to your macronutrient profile type
- Enjoy
