One of the most important (and probably overlooked) benefits of a healthy microbiome is a balanced mood.

In fact, our gut has sometimes been referred to as our ‘second brain’, as our gut and brain communicate closely through the gut-brain axis. Did you know arguably 70% to 90% of our serotonin (our ‘feel good’ hormone) is produced in the gut?

This gut loving, energy boosting recipe is the BePure spin on peanut butter and jelly! The jelly is easy to make, containing only a handful of ingredients, sweetened with fruit juice and uses the gut-healing superstar, gelatin.

Gelatin contains amino acids that helps to seal leaky gut, feeds the good bacteria in your intestinal tract and supports sleep, reduced inflammation, reduced sugar cravings and can help with joint pain.

 

BePure Gut-Loving Peanut Butter Jelly Bites Recipe

Serves 8 | GF, DF, EF, RSF

Ingredients

Peanut Butter Crust

  • 1 cup ground almonds
  • 2 tablespoons peanut butter
  • 2 tablespoon melted coconut oil
  • Pinch of sea salt

Jelly

  • 3/4 cup of frozen berries
  • 1/2 cup of coconut water
  • 1.5 Tablespoon of gelatin
  • Organic maple syrup or raw honey

    Ingredients

    Instructions

    1. Stir together all of the peanut butter crust ingredients until a moist dough is formed.
    2. Press the dough evenly into the bottom of the lined loaf pan, and place it in the freezer to set.
    3. While the crust sets, heat your frozen berries until defrosted but still cold.
    4. Puree them in your blender.
    5. Strain your berry puree through a sieve to remove any seeds. This should leave you with 1/2 cup of berry juice.
    6. Place the berry juice, coconut water, gelatin and sweetener, if using, in a saucepan. Heat over a low heat, whisking until fully combined. Cook for another 5 minutes until simmering at the edges. It should thicken a little. Do not boil!
    7. Pour over the peanut butter base and pop in the freezer to set for 30 minutes.
