Chocolate Caramel Bliss Eggs

Enjoy Easter without the sugar hangover this year. Even if you feel you have good levels of energy normally, overindulging in certain foods at special occasions such as Easter, Christmas or birthdays can leave you feeling fatigued and a bit sluggish.

To support you enjoying a mindful Easter, without all the sugar highs and lows, we've put together an alternative Easter egg recipe (and it’s incredibly delicious).

If you love chocolate and bliss balls, this recipe is the perfect combination of those two things; Chocolate Caramel Bliss Eggs! These Easter eggs will hit the spot, without sending you on a blood sugar roller coaster.


Chocolate Caramel Bliss Eggs

Bliss Eggs

Refined sugar-free | Gluten-free | Dairy-free

Ingredients:

  • 1 cup dates
  • 2 Tbsp full-fat coconut cream
  • 1½  cups of hazelnuts
  • ½ cup of almonds
  • 1 Tbsp coconut oil
  • 2 - 3 drops of vanilla extract
  • 200g dark chocolate (no sugar, above 70%)
  • Skewers
  • Freeze dried raspberries 


Instructions:

  1. Soak dates in hot water while you prepare the nuts.
  2. Blitz hazelnuts and almonds until ground and set aside.
  3. Once dates are soft, blitz them with coconut cream until thick and creamy.
  4. Combine caramel mix and nuts together in a mixing bowl, add coconut oil and vanilla extract.
  5. Roll mix tightly into 12 egg-shaped balls.
  6. Place in the fridge or freezer to cool and harden.
  7. In a heat safe bowl place 180g of chocolate. 
  8. Place the glass bowl on top of a saucepan partially filled with water, over medium heat. The creates a makeshift double boiler. Stir occasionally until the chocolate is melted and combined.
  9. Place bliss egg on your skewer and dunk into the melted chocolate, once all surfaces are covered evenly, place the egg on a tray with baking paper to cool. 
  10. Place in the fridge for the chocolate to harden.
  11. Melt extra 20 grams of chocolate and drizzle over the egg.
  12. Sprinkle with freeze-dried raspberries. 
  13. Enjoy!
